The story
A food beside the walled city
Pingyao Beef belongs to the same county whose old city became a centre of Shanxi commerce. As merchants travelled, the prepared beef moved with them, carrying a local food beyond the city walls.
Meat, salt, water and time
The traditional method is remembered through a spare set of things: a cut of beef, a knife, salt, a curing jar and a cooking pot. Selection, cutting, curing and braising produce the deep colour and tender texture associated with the name.

The protected area is the current administrative territory of Pingyao County. Production is governed by a national product standard, while enterprises must receive approval before using the special geographical-indication sign.
