Fresh lemon

Anyue Lemon

The modern Anyue lemon story is traced to 1929, when lemon material was introduced into the county. Nearly a century of selection and cultivation turned that beginning into a landscape of orchards across the central Sichuan hills.

Dried persimmon

Fuping Dried Persimmon

Fuping dried persimmon begins with the local pointed persimmon. In the transition from the Guanzhong plain to the northern hills, the fruit matures into the raw material for a food made by air, time and repeated handling.

Chinese cabbage

Jiaozhou Chinese Cabbage

Jiaozhou Chinese cabbage is locally called Jiaobai or Jiaocai. Public accounts trace its cultivation over more than a thousand years, while modern readers may know it from Lu Xun's image of northern cabbages tied with red string and honoured in the south as Jiaocai.

Linyi Winter Jujube

Linyi sits in the Yellow River triangle where Shaanxi, Shanxi and Henan meet. Abundant light and a wide day-to-night temperature swing give Linyi winter jujube its character: crisp, large, thick-fleshed, and sweet as honey.

Linyi Apple

Linyi lies on the northern rim of the Yuncheng basin, with the Yellow River to its west. It has no mountains and no mines — one of the few entirely flat counties in Shanxi. On loess at thirty-five degrees north the light is strong and the swing between day and night is wide, and that is where the sweetness and the crispness come from. Flat ground also means orchards can be laid out in long rows that machinery can enter.

Pingyao Beef

Pingyao Beef belongs to the same county whose old city became a centre of Shanxi commerce. As merchants travelled, the prepared beef moved with them, carrying a local food beyond the city walls.

Dried and aged citrus peel

Xinhui Chenpi

Xinhui chenpi begins with the peel of the Xinhui mandarin, grown inside a named protected area around the river network of Xinhui. The fruit is harvested for a material whose value begins after the flesh and peel part company.

Yuncheng Apple

Yuncheng sits in the far southwest of Shanxi, in a basin held between the Yellow River and the Zhongtiao mountains. Loess, long hours of sun, a wide swing between day and night, and enough winter cold to set the fruit — the conditions that apples want, in a place that has been farmed for a very long time.
